We love sweet potatoes here, so when we get them in our Community Supported Agriculture (CSA) vegetable box, we love them! They’re nutritious, delicious, and fun to eat. Even the kids love them.
Here’s out recipe for Spicy Sweet Potato Fries:
Spicy Sweet Potato Fries
Preheat oven to 400F or 200C
2 large Sweet Potatoes – peeled and cut lengthwize into fry sized sticks – about 1 cm max size in width
2 TBSP Extra Virgin Olive Oil
1 TBSP Cumin powder
1 tsp Chipotle powder
1/2 tsp salt
1 tsp Cilantro, minced
In large bowl, mix first 5 ingredients until well blended
Arrange in one layer on a non stick baking sheet
Bake at 400f for 30-40 minutes, turning after 20 minutes
Take out of oven and serve in your loveliest serving dish or bowl.
Sprinkle with cilantro.
We made this tonite and loved it! Truth be told, I um, made mine lightly carbonized and did, in fact, set off the smoke detector. However, in my defense, the smoke detector is overly sensitive.
