Italian Potatoes

Preheat oven to 400f (160c)
4-5 medium Russett potatoes, peeled and diced into 1 inch or 2cm cubes (enough to fill your skillet with one layer of diced taters)
1 medium yellow onion, large dice
1/2 Cup Italian Dressing

Marinate potatoes and onions in dressing in a ziptop bag for 20-30 minutes

In large cast iron skillet, arrange potatoes and onions in one layer.

Bake at 400f (160c) for 10 minutes, remove and stir

Put back in over for another 10 min, check for doneness with knife

If knife doesn’t slide easily into a potato, leave in for another 10 minutes and check again.

Great side dish that pairs well with tri-tip!
