Chorizo & Beef Meatloaf

  • 1 lb of chorizo
  • 1 lb hamburger (80/20)
  • 1 Tbsp chipotle powder
  • 1/8 cup chopped cilantro
  • 2 tsp ground cumin powder
  • 1 medium yellow onion diced
  • 1 Tbsp minced fresh garlic
  • 1 egg
  • salt & pepper
  • 1 cup Italian bread crumbs
  • 1/4 cup milk
  • 1/4 cup bbq sauce
  • 1 Tbsp white wine vinegar
  • 1 Tbsp brown sugar


Mix all ingredients together in a large bowl with your hands – you big baby

Spray 9.5 inch by 5.5 inch nonstick bread loaf pan with Pam or other cooking spray

Spread beef and chorizo mixture into pan – it should look like this:

Bake at 375f for 45 min, or 45 min at 190C if you’re so inclined.

Let set for 5 minutes and serve!

The nice thing about this meatloaf pan is that it has space for the fat to drain away, thus making it a bit lighter.
